Atkinson's Old Southern Recipes

Stuffin' Muffins

Ingredients: Directions:

2 cups Atkinson's Self Rising corn meal.
3/4 cup finely chopped celery.
3/4 cup chopped onion.
2 tablespoons sugar
2 tablespoons chopped pimiento.
1 teaspoon poultry seasoning.
2 eggs, beaten
1-1 1/2 cups milk.
1/4 cup melted shortening or oil.

 

Sift corn meal, salt, and soda together. Add milk and stir in cracklings. Form into oblong cakes and place on greased baking sheets. Bake at 450°F. for 30 minutes. Yields 3 to 4 servings.

Note:
Cracking are the pieces of pork remaining after the lard, or fat, has rendered. They should be crisp and dry.
