Crackling Cornbread

Ingredients: Directions:

2 cups Atkinson's Plain Yellow or White Cornmeal.
1 cup of sour milk or buttermilk.
1/2 teaspoon salt.
1 cup cracklings, diced.
1/2 teaspoon soda

 

Sift corn meal, salt, and soda together. Add milk and stir in cracklings. Form into oblong cakes and place on greased baking sheets. Bake at 450°F. for 30 minutes. Yields 3 to 4 servings.

Note:
Cracklings are the pieces of pork remaining after the lard, or fat, has rendered. They should be crisp and dry.
